Pici is a hand-rolled pasta – think a thicker spaghetti – that originates from Montalcino in Tuscany and Cacio e Pepe sauce is a Roman favourite.
Cacio e Pepe means just cheese and pepper and the trick to a great Cacio e Pepe is using a fantastic Pecorino Romano and more pepper than you would ever dare to add to a dish when cooking it yourself.
The dish is not so much hot as it is creamy, salty, sharp and spicy.
